How We Started
The Founder's Story
Meet Tyler Kotch — the guy who traded surgical scalpels for pizza boxes and
never looked back.
Tyler grew up in Butler, Pennsylvania, where hustle mattered, handshakes meant something, and
you showed up the same way every day. A lacrosse scholarship took him to college. Grit took
him into the medical field, flying coast to coast turning failing territories into thriving
ones. Johnson & Johnson. New York City. Big money. Bigger pressure.
Then one day, standing in an operating room, Tyler had a realization:
He was helping save lives — but he wasn’t saving his own.
So he walked away.
What Tyler wanted wasn’t just a business. It was a place.
High energy. Real people. Honest work.
He wasn’t chasing pizza at first — he was chasing PIE.ZAA: a bigger, bolder
idea of food, community, and life.
PIE.ZAA was born in Asheville, NC — a city with big personality packed into
a small-town frame. The perfect match.
Today, PIE.ZAA serves up massive slices in Asheville, Charlotte, and beyond — with plans to
go late, go nationwide, and go even bigger.
Because this was never just about pizza.
It was about people.
Energy.
Connection.
